A good nachos recipe can satisfy even the pickiest of tummies. They are an easy dinner, great for gatherings, sharing with friends or just having an easy meal all to yourself on a Friday night.

This truly one of the best nachos recipe I've ever created. I've done sheet pan nachos, but there's just something extra good when you're talking about bacon nachos.

How To Make Nachos

You have many options when making nachos.

Chips – spread the chips out on a large cookie sheet. If you are using grated cheese, you can layer the chips and the cheese as you distribute the chips.

Cheese – you have two choices. Cheese sauce or grated cheese. I usually opt for grated cheese because it clings to the chips well. But I can certainly appreciate the preference of cheese sauce. I have a regular nacho cheese sauce here, and a vegan cheese sauce here.

Toppings – Ah, the nacho toppings. So many options! Aside from the cheese you have choices.

  • Beans (usually black, pinto or refried)
  • Jalapeños
  • Olives
  • Tomatoes
  • Cilantro
  • Guacamole
  • Lettuce (usually shredded)
  • Salsa
  • Avocado (chopped)
  • Onions (chopped)
  • Sausage (usually sliced – for certain types of nachos)
  • Creme fresch
  • Barbecue sauce (for certain types of nachos)
  • Bacon (chopped)

How To Make Nachos In The Oven

I refer to nachos made in the oven as sheet pan nachos. The important part of cooking nachos in the oven is to lower your shelf in the oven. If the shelf sits too high, it will burn the nachos on top before the all the layers of cheese is melted.

Typically, you will preheat your oven to 350F. and cook the nachos just until the cheese is melted. About 10-20 minutes, depending on your oven.

  • Shredded pork nachos
  • Fruit nachos (dessert)
  • Shrimp nachos
  • Tex-Mex nachos
  • Cajun nachos
  • Bacon and egg nachos
  • Greek nachos
  • Cheese burger nachos
  • And so much more

Nacho Bar

If you want family-style nachos that are made the way each person wants them, you can easily set up a nacho bar with quarter-size sheet pans.

On the table, you will set up a big bag of corn chips (or bowl if you make your own), a big bowl of cheese or cheese sauce (or both!), and all the toppings you have to offer.

Get the oven revved up and in a few minutes, everyone has nachos they love for dinner.

How To Use Up Leftover Nachos

It's hard to imagine having any leftovers after a meal of nachos, but it happens. And since your nachos obviously have toppings on them, it might seem like there isn't much to do with them. But I beg to differ.

  • Meatloaf – Crush them up and put them into meatloaf.
  • Burgers – Crush them up with a few extra Mexican spices and mix them into your burgers. I promise, it's good.
  • Mexican Casserole – Put the nachos into a casserole dish, add a small amount of water (2-4 tbsp.), top with extra cheese and bake. The chips will soften and create a yummy casserole. Here is a version of this casserole.

What You'll Need To Make This Nachos Recipe With Bacon

  • 12 oz. bag corn chips (organic are best)
  • 8 oz. grated cheddar cheese
  • 2 large jalapeño peppers
  • 1 cup finely diced red onions
  • 2 tbsp. oil
  • 6 medium garlic cloves
  • 5 slices turkey bacon
  • 1 1/2 cups chopped tomatoes
  • 1/2 cup fresh cilantro

How To Make Nachos With Bacon And Jalapeños

In a skillet, sauté the pepper, onion and garlic in the oil, adding the garlic into the skillet in the last minute of cooking.

Set your bacon to cook separately in whichever way you choose.

Set the shelf in your oven to the lowest spot in the oven, and preheat 350F.

Layer the chips on a baking pan with half of the cheese mixed into the chips.

Now layer on the sautéd vegetables from the skillet and sprinkle on the chopped bacon.

Sprinkle on the last half of the grated cheese and bake for 10-15 minutes, or until the cheese is fully melted.

When done, remove from oven and top with fresh, chopped tomatoes and cilantro before serving.

  • Sheet pan

  • 12 oz. bag corn chips (organic are best)

  • 2 large jalapeño peppers (deseeded and minced)
  • 1 cup finely diced red onions
  • 2 tbsp. oil
  • 6 medium garlic cloves (minced)
  • 5 slices turkey bacon (cooked separately and chopped)
  • 1 1/2 cups chopped tomatoes
  • 1/2 cup fresh cilantro (chopped – optional)
  • Sauté the peppers, onions and garlic in oil.

  • Cook the bacon separately and chop

  • Preheat oven to 350 F.

  • Layer the chips on a baking pan with half of the cheese mixed into the chips.

  • Over the top, distribute the sautéd veggies.

  • Sprinkle the chopped bacon over the top

  • Sprinkle the last half of the grated cheese over the top.

  • Bake for 10-15 minutes, or until cheese is fully melted.

  • Top with chopped tomatoes and cilantro and serve.
